The Langhe Nebbiolo

Fresh and Youthful. That’s how a classic Nebbiolo must be, a wine you drink daily with your favourite food. A classic Nebbiolo must express all the freshness potential of the grape. Livio, the producer, uses something similar to the Beaujolais vinification maceration method with Nebbiolo.
Livio calls it the “hamburger maceration method”. The wine-making process for this wine is fascinating. It’s a natural traditional semi-carbonic eight-day maceration similar to wine-making techniques in the best Beaujolais. Layers of whole and crushed bunches will then fill the vessel. The CO2 produced by the fermentation of the crushed berries causes a carbonic maceration of the whole bunches as the layers will be naturally rich in carbon dioxide.
The result is a fresh and fruity wine that distinguishes itself from the traditional full-body premium Nebbiolo wines like Barolo, Barbaresco, Sforzato or Valtellina Superiore. I believe this wine is a perfect example of modern 2022 wine-making. Livio is an artist; this wine is outstanding.
